Combine effect of Curcuma longa (turmeric) powder and dry-salt with sun-drying in quality changes of three freshwater fish species of Meghna River

Drying is used as a means of prolonging shelfrnlife of fishes after capture. Sun-drying is one of the most important low costrnmethods of fish preservation and the products provide nutrients to allrncategories of people through the world including Bangladesh. The aim of thisrnstudy was to identify the combine effect of turmeric powder and salt (dry)rnalong with sun-drying process on physico-chemical (physical characteristics,rnproximate and chemical analysis), mineral and bacteriological quality of threernfresh water fish products (shol, taki and tengra). Sensory characteristics,rnmoisture, protein, fat, ash, salt, TVB-N, FFA, pH, some mineral contents (Ca,rnMg, Fe, Cu, Zn, Mn) and bacterial load (SPC and HBC) were analyzed of freshlyrnprocessed turmeric and salt treated sun-dried fishes using standard methods ofrnanalyses. The lowest moisture content of these three dried fish-productsrnindicated that it was more resistant to the enzymatic and microbial activities.
